Ingredients

  • 1/2 kg - potatoes, boiled and peeled
  • 1/4 kg - Broccoli
  • 1.5 cups - Coconut Milk
  • 2 tbsp - yellow curry paste
  • 2 onions, chopped finely
  • 1/4 cup - chopped Carrots
  • 3 cups - water
  • salt to taste
  • 1/8 tsp - pepper powder
  • 2 tsp - oil

How to Make

  • Method for vegetable stock :
  • Saute onion till transparent.
  • Add water and carrots.
  • Let it boil till water is reduced to 2 cups.
  • Method for curry :
  • Boil the potatoes.
  • Cook broccoli till half cooked.
  • Heat oil in a pan.
  • Put yellow paste and 2 tbsp of coconut milk.
  • Stir till the mixture becomes dry.
  • Add 2 tbsp of broth, and continue stirring.
  • When oil separates, add rest of coconut milk.
  • Add 1.5 cup of vegetable stock.
  • Bring it to boil.
  • Add potatoes and broccoli.
  • Let it cook till required consistency.
  • Serve with rice.
