Ingredients

  • 1/2 kg - potatoes, boiled and peeled
  • 1/4 kg - Broccoli
  • 1.5 cups - Coconut Milk
  • 2 tbsp - yellow curry paste
  • 2 onions, chopped finely
  • 1/4 cup - chopped Carrots
  • 3 cups - water
  • salt to taste
  • 1/8 tsp - pepper powder
  • 2 tsp - oil
  • How to Make Thai Yellow Curry:

    1. Method for vegetable stock :
    2. Saute onion till transparent.
    3. Add water and carrots.
    4. Let it boil till water is reduced to 2 cups.
    5. Method for curry :
    6. Boil the potatoes.
    7. Cook broccoli till half cooked.
    8. Heat oil in a pan.
    9. Put yellow paste and 2 tbsp of coconut milk.
    10. Stir till the mixture becomes dry.
    11. Add 2 tbsp of broth, and continue stirring.
    12. When oil separates, add rest of coconut milk.
    13. Add 1.5 cup of vegetable stock.
    14. Bring it to boil.
    15. Add potatoes and broccoli.
    16. Let it cook till required consistency.
    17. Serve with rice.
