Ingredients

  • 1 pound snapper, sea bass or cod
  • 2 tsp. ground coriander
  • 1 ½ tsp. salt
  • ½ cup grated unsweetened Coconut
  • 2 tsp. green pepper, finely chopped
  • 2 large tomatoes, chopped
  • ½ cup water
  • 1 bay leaf, crumbled
  • 3 tbsp. Lemon juice
  • Pinch of Turmeric
  • 2 tbsp. vegetable oil
  • 1 small onion, chopped
  • 1 tsp. cumin
  • ½ tsp. cayenne pepper
  • 1 tsp. Turmeric

How to Make Tomato Fish Curry

  • Cut fish into serving slices and rub well with salt and pinch of turmeric. Keep aside.
  • Heat oil and fry onion until golden brown.
  • Put in the cumin, cayenne pepper, turmeric and ground coriander, and fry for 2 to 3 minutes.
  • Add coconut and green pepper. Stir for a minute or two.
  • Put in tomato and water. Mix well.
  • When sauce comes to boil, add fish, bay leaf and lemon juice.
  • Lower heat and simmer until fish is tender.
