Ingredients

  • Medium sized Tomatoes - 6
  • Medium sized Brinjals - 2 (chopped)
  • Small Onion - 1 (chopped)
  • Capsicum - 1 (chopped)
  • Garlic - 2 Cloves (minced)
  • Pepper powder to taste
  • Salt to taste
  • Oil to fry
  • How to Make Tomatoes stuffed with vegetables:

    1. Slice top from tomatoes and scoop out flesh. Mix the tomato flesh with remaining vegetables and seasoning.
    2. Heat oil. Add vegetable mixture and fry till cooked and almost dry.
    3. Stuff the tomatoes with the mixture and place under a grill for one minute.
    4. Serve hot.
