Ingredients

  • 2 cups - cooked basmati rice
  • 1 - medium sized potato, peeled and cut into cubes
  • 1 - big onion (or two small onions), chopped
  • 2-3 - green chillies
  • 1/2 cup - fresh or frozen peas
  • 1/2 cup - fresh cauliflower
  • Lots of coriander leaves
  • 1/2 tsp - jeera
  • 1/2 tsp - mustard seeds
  • 1/4 tsp - garam masala
  • 1 tsp - coriander powder
  • 1/2 tsp - turmeric powder
  • 1 tsp - red chilli powder
  • Salt - to taste
  • 2-3 tbsp - oil

How to Make Traditional Vegetable Fried Rice

  • Take oil in a pan. Once hot, add jeera and mustard seeds and let them pop.
  • Add chopped onions, green chillies and stir it until golden brown.
  • Add all the masala powders and saute.
  • Add your potatoes and mix well. Cover it and cook until potatoes are partly cooked.
  • Add cauliflower and peas and stir it well with a little salt.
  • Cover the vessel and let it cook.
  • When it is cooked, add rice and mix well.
  • Check and correct salt. Add garam masala and dhania (coriander) leaves.
  • Mix well and cover it for 4-5 mins before you serve.
  • Can be served with raitha.
