Ingredients

  • 2 cups - cooked basmati Rice
  • 1 - medium sized potato, peeled and cut into cubes
  • 1 - big Onion (or two small Onions), chopped
  • 2-3 - Green chillies
  • 1/2 cup - fresh or frozen peas
  • 1/2 cup - fresh Cauliflower
  • Lots of Coriander leaves
  • 1/2 tsp - Jeera
  • 1/2 tsp - Mustard Seeds
  • 1/4 tsp - Garam Masala
  • 1 tsp - coriander powder
  • 1/2 tsp - Turmeric powder
  • 1 tsp - Red Chilli powder
  • Salt - to taste
  • 2-3 tbsp - oil
  • How to Make Traditional Vegetable Fried Rice:

    1. Take oil in a pan. Once hot, add jeera and mustard seeds and let them pop.
    2. Add chopped onions, green chillies and stir it until golden brown.
    3. Add all the masala powders and saute.
    4. Add your potatoes and mix well. Cover it and cook until potatoes are partly cooked.
    5. Add cauliflower and peas and stir it well with a little salt.
    6. Cover the vessel and let it cook.
    7. When it is cooked, add rice and mix well.
    8. Check and correct salt. Add garam masala and dhania (coriander) leaves.
    9. Mix well and cover it for 4-5 mins before you serve.
    10. Can be served with raitha.
