  • 1 - Butternut squash
  • 1 - Onion
  • 2 - Carrots
  • 2 cups - vegetable broth
  • 1 can - Coconut Milk
  • Salt to taste
  • Pepper powder - 1/2 tsp
  • 2 tbsp - Olive oil
  • How to Make Vegan Butternut Squash Soup:

    1. Heat olive oil in a pressure cooker
    2. Saute the onions until they turn translucent, add the chopped carrots, cubed butternut squash, cook for few minutes.
    3. Now add the vegetable broth, salt, cover the cooker with lid, put the weight and cook up to three whistles
    4. Once the steam subsides, add the coconut milk, pepper powder and blend the cooked vegetables with a hand blender to smooth paste
    5. Serve.
