Ingredients

  • broccoli - 1/2 cup, cubed
  • cauliflower - 1/2 cup, cubed
  • baby corn - 1/2 cup, sliced
  • eggs - 2, lightly beaten
  • red capsicum - 1/2 cup, cut into strips
  • green capsicum - 1/2 cup, cut into strips
  • cashew nuts - 1/2 cup
  • almonds - 1/2 cup
  • pumpkin seeds - 1/2 cup
  • tomatoes - 250 gm, skinned and chopped
  • onion - 1/2 cup, finely chopped
  • mixed herbs (thyme, rosemary) - 1 tsp
  • pepper to taste
  • salt to taste

How to Make Vegetable and Nut Bake

  • Steam or cook the vegetables covered in microwave oven for 5 minutes on full power.
  • Transfer them to a deep baking dish, greased with butter.
  • Grind all the nuts together to a coarse powder.
  • Mix with rest of the ingredients.
  • Spread the nuts mixture over the vegetables in the dish.
  • Dot with butter and bake in a hot oven (200 degrees centigrade) for about 30-40 minutes till the nut topping is well risen and golden brown.
