Ingredients

  • 1 - Green Pepper
  • 1 - Red Pepper, Chopped Julienne
  • 1 - Yellow Pepper
  • 1 - medium Onion (Chopped fine)
  • 2 - Red Chillies
  • 1 tsp - Black Pepper Powder
  • 1 tbsp - Cilantro/coriander leaves
  • Salt to taste
  • Oil
  • 7 - 8 Mexican Tortillas or Home made Chapattis.
  • How to Make Vegetable Fajitas:

    1. Saute the onion and red chillies in heated oil.
    2. When onion becomes translucent, add the bell peppers.
    3. Stir well and cook until bell peppers become tender.
    4. Add salt, pepper and cilantro leaves (finely chopped).
    5. Allow to cool.
    6. Roll the above mixture in the Mexican tortillas or chapattis. About 1 tbsp in each.
    7. Serve as a starter or an entre.
