Ingredients

  • For the kozhukattai:
  • 1 cup - rice flour
  • 1 tsp - salt
  • 1 tbsp - oil
  • For the vegetable stuffing:
  • 1 cup - grated carrot
  • 1 cup - grated cabbage
  • 1 cup - finely chopped beans
  • 1 cup - finely chopped potato
  • 1 tbsp - finely chopped coriander
  • 1 tbsp - finely chopped curry leaves
  • 1 cup - boiled peas
  • 1 tsp - chilli powder
  • 1 tsp - turmeric powder
  • 1 tsp - cumin powder
  • A pinch of asafoetida
  • Salt to taste
  • 1 tbsp - ghee

How to Make Vegetable Kaara Kozhukattai

  • Heat ghee in a kadai and saute the vegetables.
  • Add all the masala powders. Cook on a low fire for 3-4 mins and then take off the flame to cool a little.
  • For the kozhukattai, heat 1 cup of water in a kadai.
  • Add a little salt to the water. When it boils, add rice flour and stir well.
  • Once the flour thickens, remove from fire and set aside.
  • Mix the dough well with a little oil and make small balls out of the mixture.
  • Flatten the balls and then press with your thumb to get a cup shape for the kozhukattai.
  • Fill in the vegetable stuffing, cover well and then steam the kozhukattai.
