  • 1 packet mixed vegetable soup
  • 1/2 cup basic white sauce
  • 1 tbsp each carrot, cabbage, cauliflower and beans
  • 1 tsp olive oil
  • 2 tbsp cheese
  • Salt and pepper to taste

How to Make Vegetable Soup Chowder

  • Add enough water to dissolve contents of one packet of mixed vegetable soup and keep aside.
  • Chop 1 tbsp each of carrot, cabbage, cauliflower and beans.
  • Stir fry them in 1 tsp olive oil.
  • Add contents of soup, stirring continuously.
  • Stir and bring to a boil. Reduce heat and simmer for 5-7 mins.
  • Grate 2 tbsp cooking or processed cheese into soup.
  • Stir in white sauce and mix gently till all flavours are well blended.
  • Switch off just before boiling resumes, add salt and pepper as desired and serve piping hot.
