Ingredients

  • 1/4 cup - black beans (pre-soaked and cooked till soft )
  • 1/4 cup - kidney beans (pre-soaked and cooked till soft )
  • 1/4 cup - Chickpeas (pre-soaked and cooked till soft )
  • 1 - onion, chopped
  • 1 - large potato, cubed
  • 1 tbsp - ground cumin-coriander powder
  • 1 tsp - Cinnamon powder
  • 1 tsp - chilli powder
  • 1 to 2 tbsp - chipotle peppers, chopped (as per taste)
  • 2 to 3 - cloves, minced
  • 1 tsp - Molasses (optional)
  • 1 can - diced/crushed Tomatoes (or you can blanch the Tomatoes, peel the skin and chop them)
  • 1 tbsp - Tomato paste (optional)
  • 1 tbsp - Sugar
  • Salt to taste
  • 1 cup - water/vegetable stock
  • How to Make Vegetarian Chilli:

    1. Heat oil in a pan and cook the onions, garlic and potatoes for 5-6 minutes.
    2. Add all the spices and cook further for another 3-4 minutes.
    3. Then add the rest of the ingredients - beans, tomatoes, paste, molasses and sugar along with 1 cup water/vegetable stock.
    4. Gently simmer for about 10-15 minutes and serve with sour cream or chips or with rice if it's part of a meal.
