How to Make Vengaya Milagu Kuzhambu

  • Heat the gingili oil; fry the mustard seeds, cumin seeds, and fenugreek seeds till they turn brown.
  • Immediately add the crushed garlic cloves, and curry leaves and fry for a few minutes.
  • Add the diced shallots and crushed tomatoes and cook.
  • Add the pepper powder, turmeric powder, red chilli powder, coriander powder, and salt to the tamarind extract. Mix everything well.
  • Add this spiced tamarind juice to the pan and cook till the oil separates.
