  • 1 cup - Tamarind juice
  • 15 - Shallots (diced)
  • 1 - Tomato (crushed)
  • 1 tsp - Pepper powder
  • 1/4 tsp - Turmeric powder
  • 1/2 tsp - Red Chilli powder
  • 1 tsp - Coriander powder
  • 1 tsp - Mustard seeds, Cumin seeds and Fenugreek seeds
  • A few Curry leaves
  • 5 - Garlic Cloves (crushed)
  • 2 tbsp - Gingili oil
  • Salt
  • How to Make Vengaya Milagu Kuzhambu:

    1. Heat the gingili oil; fry the mustard seeds, cumin seeds, and fenugreek seeds till they turn brown.
    2. Immediately add the crushed garlic cloves, and curry leaves and fry for a few minutes.
    3. Add the diced shallots and crushed tomatoes and cook.
    4. Add the pepper powder, turmeric powder, red chilli powder, coriander powder, and salt to the tamarind extract. Mix everything well.
    5. Add this spiced tamarind juice to the pan and cook till the oil separates.
