Vishu Puzhuku is a must-have dish on this harvest festival. The tasty side dish is made with Kada Chakka (Breadfruit) , ripe pumpkin, white peas, raw plaintain , grated coconut mixed along with rich Kerala spices. 

The protein-rich raw fruit is slow cooked along with other vegetables and seasoned with spicy masalas. Coconut oil is added at last for some extra kick.

Ingredients

  • 1/2 - Bread fruit
  • 1 piece - Ripe pumpkin
  • 1/4 cup - White peas
  • 1 - Raw plantain
  • 5 - Long runner beans
  • 1 tsp - Chilli powder
  • 1 tsp - Turmeric powder
  • Salt to taste
  • For Masala:
  • 2 - Green chillies
  • 1/2 a coconut - grated
  • A few curry leaves

How to Make Vishu Puzhuku

  • Cook peas and keep aside.
  • Slice all the vegetables into medium pieces.
  • Coarsely grind the ingredients for the masala and keep aside.
  • Cook bread fruit and plantain with sufficient water.
  • When it is half done, add pumpkin, runner beans and salt.
  • When it is done, add cooked peas, chilli powder, turmeric powder, ground masala and mix well.
  • Before removing from fire, mix well by adding little coconut oil and a few curry leaves.
