  • 1 - large, Onion
  • 2 tbsp - Garlic infused Olive oil
  • Salt to taste)
  • 820 g - canned chopped Tomatoes
  • 2 tbsp - double Cream
  • 1 kg - ridged Pasta
  • 125 ml - vodka
  • 4 tbsp - unsalted Butter
  • Parmesan cheese, grated
  • How to Make Vodka Pasta:

    1. In a big pan boil water.
    2. Finely chop the onion.
    3. In a large pan, heat the garlic infused olive oil, finely chopped onion and salt.
    4. Cook the onion in low fire for about 15 mins stirring occasionally.
    5. It should be very soft and almost beginning to caramelize.
    6. Add canned chopped tomatoes and continue cooking over low heat, simmering for another 15-20 mins.
    7. Stir in the double cream and take the pan off the fire.
    8. Boil water add salt and put the penne.
    9. Drain the cooked pasta, tip it back in the pan and pour over the vodka, and add the butter and some more salt.
    10. Saute the penne in the vodka and melting butter and then tip it into the tomato sauce.
    11. Toss the pasta in the sauce until it is evenly coated. Serve
