  • 1 can - white bean soup (medium can)
  • 1 cup - red and green bell pepper pieces
  • 1 cup - Corn kernels
  • 1 - Onion (chopped)
  • 2 - Garlic Cloves (crushed)
  • Olive oil as needed
  • 2 tsp - Corn flour
  • 3 cups - vegetable broth
  • salt as needed
  • pepper powder as per taste
  • 1 tbsp - Parsley leaves (chopped)
  • How to Make White Bean, Bell peppers & Corn Soup:

    1. Heat enough olive oil and saute the chopped onions and crushed garlic cloves until the onions turn translucent.
    2. Drain the canned white beans, add the chopped bell peppers and corn kernels to the sauteed onions and cook for few minutes.
    3. Immediately add the white beans and stir for a few seconds. Add the vegetable broth with enough salt and pepper powder.
    4. Bring everything to boil and put to simmer. Cook until the vegetables are well done.
    5. Make a thin white sauce with the corn flour and water.
    6. Add the sauce and parsley leaves to the soup and cook until the soup thickens.
