Ingredients

  • 2 cups - white beans (canned and drained)
  • 1 - onion (chopped)
  • 3 - tomatoes (chopped)
  • 2 - garlic cloves (minced)
  • 1 - carrot (chopped)
  • 2 - Celery rib (chopped)
  • 1/2 tsp - dry thyme leaves
  • 1 - bay leaves
  • 2 cups - vegetable stock water
  • 1/2 tsp - pepper powder
  • salt to taste
  • olive oil

How to Make White Bean Soup

  • Heat the olive oil and saute the onions with bay leaves.
  • Add the chopped carrots, chopped celery and cook until tender.
  • Add the chopped tomatoes, garlic cloves and thyme leaves and cook everything for a while.
  • In the meantime, grind a cup of white beans as fine puree and keep aside.
  • Add the remaining white beans, vegetable stock water, pepper powder, white bean puree to the vegetables and cook on medium high flame for a few minutes. Keep stirring.
  • Once the soup thickens, put off the flame.
  • Serve hot with toasted bread slices.
