  • 4 - small eggplants
  • 1/4 cup - Coriander seeds
  • 2 - Garlic Cloves
  • 4 - dry Red Chillies
  • Small piece of dry Coconut
  • Few Coriander leaves
  • Salt to taste
  • 5 tbsp - oil
  • How to Make Whole Eggplant Fry:

    1. Fry coriander seeds, red chillies in 1 tbsp of oil till golden brown.
    2. Cut dry coconut into very small pieces.
    3. Grind fried coriander seeds, red chillies, coconut and garlic cloves to a fine powder. Keep aside.
    4. Cut eggplants into 4 sections, keeping the stalk intact.
    5. Put them in water so that they don't turn black.
    6. Mix in salt and coriander leaves to the ground masala.
    7. Stuff the cut eggplants with the masala.
    8. Heat the remaining oil and fry stuffed eggplants in it till they get cooked.
    9. While cooking, keep turning the eggplants to avoid burning.
    10. This whole eggplant fry will taste good with hot rice and ghee.
