Ingredients

  • For the cake batter:
  • 1 cup - Oat flour
  • 1 cup - whole Wheat flour
  • 1 tsp - baking soda
  • 1/2 tsp - salt
  • 1/2 cup (1 stick) - unsalted Butter
  • 2/3 cup - packed light or dark Brown sugar
  • 1.5 cups - mashed Bananas (about 3-4 large Bananas)
  • 1/2 cup - Greek yogurt, fat free
  • 1 tsp - vanilla extract
  • 1/2 cup - chopped Walnuts
  • 1 cup - chocolate or toffee chips (optional)
  • For the crunch topping:
  • 3/4 cup - old fashioned Oats
  • 1/2 cup - packed light or dark Brown sugar
  • 1/2 tsp - ground Cinnamon
  • 1/4 tsp - salt
  • 2 tbsp - unsalted butter, melted
  • 1/4 cup - chopped Walnuts

How to Make Wholegrain banana cake

  • Preheat the oven to 350 degrees F. Grease an 8 inch square pan.
  • For the cake batter:
  • Whisk together the flour, soda and salt in a medium bowl.
  • Cream together butter and sugar in a large mixing bowl until light and fluffy.
  • Add in half of the flour and then add the bananas, yogurt and vanilla. Add the remaining flour, nuts and chips.
  • Mix until evenly moistened.
  • Transfer the batter to the prepared pan.
  • To make the topping:
  • Combine all the dry ingredients (except nuts) in a bowl.
  • Stir in the melted butter until the moisture forms large crumbs. Stir in chopped nuts.
  • Sprinkle the topping over the batter in the pan.
  • Bake until the edges pull away from the pan and a cake tester inserted in the centre comes out clean. It takes about 30-45 minutes.
  • Remove and place on a rack to cool for 20 minutes before serving warm as it is or with ice cream.
