Ingredients

  • 1 pound - whole-grain Pasta
  • 1 cup - Olives (cut into rings)
  • 2 cups - green beans (cooked)
  • 3 tbsp - roasted Sunflower seeds
  • For the pesto:
  • 4 cups - baby Spinach
  • 1/4 cup - Cashew nuts
  • 4 Cloves - Garlic (smashed)
  • 1/4 cup - extra virgin Olive oil
  • 1 tbsp - white miso
  • How to Make Wholegrain Pasta With Spinach Pesto:

    1. Cook the whole-grain pasta in plenty of salted water as per the package instructions until al dente.
    2. Place all pesto ingredients in a food processor and process until everything's broken down into a rough paste
    3. Place the pesto and pasta in a bowl, and add all the vegetables and sunflower seeds. Add salt. Mix together thoroughly and serve.
