Delicious winter fruits infused with the creaminess and tanginess of orange ricotta is just what you need for a sumptuous winter morning or evening dessert.
This amazing vegetarian dish even works as a great breakfast item when you are running late, or simply a healthy citrus meal which you can eat for both taste and fill without having to reach for unhealthy options.  

Simply get together some chopped apricots, dried figs, dried plums or prunes, raisins, cherries, plums, and a peeled and wedge-cut pear and stir them all together with the grated rinds of oranges, orange juice, and honey in a saucepan. After pouring in a little water for the cook, let the concoction simmer for about 6-7 minutes before letting it stand aside. For this delicious orange ricotta, beat plain or Greek yogurt, honey, orange rinds and orange juice together before serving them with the winter fruits concoction you have prepared. Voila! Your ‘winter in a bowl’ fruits with ricotta is ready!

Ingredients

  • ¼ cup dried apricots, coarsely chopped
  • ½ cup dried figs, chopped
  • 10 Prunes (dried plums), pitted
  • 2 tbsp. Raisins
  • 2 tbsp. dried Cherries
  • 2 plums, halved and pitted
  • 1 pear, peeled and cut into wedges
  • 3 tbsp. Orange juice
  • Grated rind of 2 Oranges
  • 3 tbsp. Honey
  • ¼ cup boiling water
  • 1 cup ricotta cheese
  • ½ cup Greek or Plain Yoghurt

How to Make Winter Fruits with Orange Ricotta

  • Stir together all the fruit, 2 tbsp. of the orange juice, the grated rind of 1 orange, and 2 tbsp. of the honey in a saucepan.
  • Pour in the measured water and bring to a gentle simmer.
  • Then cook for 6-7 minutes, stirring occasionally.
  • Let stand for 8-10 minutes.
  • Meanwhile, beat together the remaining orange juice, orange rind, and honey with the ricotta and yogurt in a large bowl.
  • Spoon the winter fruits into 4 bowls and serve with the orange ricotta.
