Ingredients

  • 250 g - Ash gourd
  • 250 g - Pumpkin
  • 250 g - Sweet Potato
  • 250 g - Gherkins
  • 250 g - cow peas (long beans)
  • 250 g - Ridge gourd
  • 8 - 10 - Green chillies
  • 2 tbsp - Rice flour
  • 1 tsp - sugar, optional
  • 2 - coconuts, grated (thick and thin Milk extracted)
  • salt
  • For seasoning:
  • 2 tbsp - oil or Ghee
  • 1 tsp - mustard
  • 1 tsp - cumin
  • Curry leaves
  • How to Make Yogi Rathna:

    1. Cut all the vegetables into thick strips. Cook them with slit green chillies in thin coconut milk. Add salt, simmer for 2 minutes.
    2. Mix rice flour with thick coconut milk and add to the vegetables.
    3. Just as it begins to boil, remove from fire.
    4. Prepare seasoning with oil or ghee, mustard, cumin and curry leaves.
    5. Add to the vegetables.
    6. Add sugar if desired.
