  • For Vadai:
  • Urad Dal (White) - 1.5 cups
  • Green chilli - 2
  • Red Chilli - 6
  • Salt
  • Hing - 2 pinches
  • Water
  • Curry leaves
  • For Thayir:
  • Thick fresh Curd - 4 cups
  • Salt
  • Grated Coconut - 2 handfuls
  • Green chillies - 2
  • For Garnishing:
  • Grated carrot, Coriander leaves
  • Pepper powder - a pinch (optional), Chat Masala powder - a pinch (optional)
  • How to Make Yummy Thayir Vadai:

    1. Soak urad dal for 1.5 hours in lots of water. Meanwhile, beat curd well.
    2. Grind grated coconut, green chillies in mixie to paste.
    3. Mix the above paste to the curd and add little salt.
    4. Refrigerate the above.
    5. After 1.5 hrs, wash dal several times with water and allow water to drain for sometime. Then grind dal to smooth paste adding very little water.
    6. Heat oil. Prepare and fry vadas as usual.
    7. When the vadas are fried, immediately drop them into a vessel containing warm water.
    8. After 5 mins, take the vadas form warm water and drop them into the refrigerated curd.
    9. Prepare all this well in advance, since thayir vadai tastes good only when the vadai absorbs the curd well.
    10. Just before serving, remove from fridge and garnish.
