  • 1 cup - grated Zucchini
  • 1.5 cup - whisked Curd
  • 1/4 cup - grated Coconut
  • 1 tsp - Cumin seeds
  • 2 - Green chillies
  • A pinch - Turmeric powder
  • 1/2 tsp - Mustard Seeds
  • 1/2 tsp - Urad Dal
  • 2 - dry Red Chillies
  • A few sprigs - Curry leaves
  • Oil as required
  • Salt to taste
  • How to Make Zucchini Moru Curry:

    1. Heat enough oil in a microwave bowl for a few seconds, add mustard seeds, urad dal, curry leaves and dry red chillies, cook for 2-3 minutes on high.
    2. Meanwhile, grind grated coconut, cumin seeds and green chillies into a fine paste with enough water.
    3. Once the tempered spices turn brown, add grated zucchini and cook for 3 minutes on high (stir twice).
    4. Add the grounded paste, turmeric powder and salt to the cooked zucchini, stir once and cook for 5-7 minutes on high (stir in between).
    5. Add the whisked curd, give a stir and cook for 1-2 minutes. Serve with rice and spicy fried potatoes.
