Ingredients

  • 1 cup - grated zucchini
  • 1.5 cup - whisked curd
  • 1/4 cup - grated coconut
  • 1 tsp - cumin seeds
  • 2 - green chillies
  • A pinch - turmeric powder
  • 1/2 tsp - mustard seeds
  • 1/2 tsp - urad dal
  • 2 - dry red chillies
  • A few sprigs - curry leaves
  • Oil as required
  • Salt to taste

How to Make Zucchini Moru Curry

  • Heat enough oil in a microwave bowl for a few seconds, add mustard seeds, urad dal, curry leaves and dry red chillies, cook for 2-3 minutes on high.
  • Meanwhile, grind grated coconut, cumin seeds and green chillies into a fine paste with enough water.
  • Once the tempered spices turn brown, add grated zucchini and cook for 3 minutes on high (stir twice).
  • Add the grounded paste, turmeric powder and salt to the cooked zucchini, stir once and cook for 5-7 minutes on high (stir in between).
  • Add the whisked curd, give a stir and cook for 1-2 minutes. Serve with rice and spicy fried potatoes.
