  • 1 cup - Zucchinis (cubed)
  • 6 - Garlic Cloves
  • 1 tbsp - Red Chilli powder
  • 1 tsp - Amchur powder
  • 1 tbsp - Mustard Seeds
  • 1 tbsp - Fenugreek seeds
  • Oil
  • Salt
  • 1/2 tsp - Mustard Seeds for tempering
  • How to Make Zucchini Pickle:

    1. Dry roast the mustard seeds, and fenugreek seeds together in a pan, cool and grind to a fine powder.
    2. In a bowl, mix the zucchini, red chilli powder, amchur powder, ground mustard-fenugreek powder, and salt and mix it with a wooden spoon.
    3. Heat oil, splutter mustard seeds. Add the garlic cloves and fry till they turn slightly brown.
    4. Add this tempering to the zucchinis and spices.
    5. Mix well and store in an air tight box.
