Ingredients

  • 110g - Plain flour
  • 75 g - Butter
  • 50 g - Ground Almonds with skin
  • 1/4 tsp - Bicarbonate of soda
  • 1 tsp - Finely grated orange zest
  • 50 g - Caster Sugar
  • For the butter cream:
  • 60 g - Butter
  • 120 g - Icing sugar
  • 1 tsp - Grated orange zest
  • 1/4 tsp- Orange food coloring( optional).

How to Make Almond Biscuits with Orange Butter cream

  • Preheat the oven to 160 degree Celsius.
  • Sift the flour and soda, add the ground almonds in a large bowl and mix well.
  • Now add the diced butter to the mixture and mix until it's coarse.
  • Now add the sugar, knead it into a dough.
  • Now roll out the dough to a 1/2" thickness and place it between two sheets of baking paper.
  • Now cut out the cookies with a cookie cutter and place in a baking sheet lined with baking paper.
  • Bake in the preheated oven for 15 to 20 minutes.
  • Now cool on a wire rack.
  • To prepare the butter cream, add the softened butter to a bowl, and then add the sifted icing sugar, food colouring and grated orange zest, and mix into a smooth paste.
  • Pipe the cream with a star nozzle on the cookie and sandwich with the other cookie.
  • Serve with tea.
