  • 2 egg whites
  • 100 gms. Ground almonds
  • 75 gms. Caster sugar
  • 25 gms. Ground rice
  • Dew drops almond essence
  • 16 blanched almond halves

How to Make Almond Macaroons

  • Line baking trays with rice paper.
  • Pre-set oven to 150 degrees C.
  • Whisk egg white until it forms soft peaks.
  • Fold in ground almonds, sugar, ground rice and the almond essence.
  • Mix well.Shape into 16 balls.
  • Place on the rice paper and press lightly to flatten.
  • Top each with a halved almond.
  • Brush with egg white and bake for 25-30 mins. until pale gold.
  • Leave to cool before tearing away the rice paper.
