Ingredients

  • 1 kg - chicken, jointed and cut into medium-sized pieces
  • 3 - big tomatoes, pureed
  • 2 - big onions, chopped
  • 3 - medium-sized potatoes, pealed and cut into quarters
  • 3 tbsp - oil
  • Salt to taste
  • 1 tsp - powdered mustard
  • 3 tsp - chilli powder
  • 2 tsp - cumin powder
  • 1 tsp - pepper powder
  • 2 tsp - garlic paste
  • 1/2 cup - vinegar
  • 1/2 tsp - turmeric powder

How to Make Anglo-Indian Chicken Vindaloo

  • Wash the chicken and keep aside.
  • Heat oil in a vessel or pressure cooker and fry the onions golden brown.
  • Add the garlic paste and fry well. Add chilli powder, turmeric powder, cumin powder, mustard powder, pepper powder and a little water and fry well until the mixture oozes oil.
  • Add the tomato puree and salt and fry for some more time.
  • Add the chicken, potatoes and vinegar and mix well.
  • Add water to get the right consistency for the gravy and pressure-cook until done (2-3 whistles).
