  • 3 large long brinjals
  • 2 onions, grated
  • 2 tomatoes, chopped
  • 1 tsp - ginger-garlic paste
  • 1 tsp - green chilli paste
  • 1/2 tsp - chilli powder
  • 1/2 tsp - lemon juice
  • 3 tbsp - rice, cooked
  • 5 tbsp - oil
  • Grated cheese as needed
  • Salt and pepper to taste

How to Make Baked brinjals

  • Remove stems and cut brinjals into two - from top to bottom.
  • Scoop out flesh and apply lemon juice to brinjal cavities.
  • Meanwhile heat oil.
  • Add ginger-garlic and onions. Brown.
  • Add tomatoes, brinjal flesh, green chilli paste, chilli powder and salt and pepper.
  • Cook till soft and add rice and a little cheese.
  • Spoon mixture into 6 greased brinjal cases and top with plenty of cheese.
  • Bake in a hot oven till cases are soft and cheese has melted.
  • Serve hot.
