  • 2 large tomatoes
  • 2 capsicums
  • 250 gms. Rice
  • 1 ½ cups hot water
  • 1 ½ tbsp. chicken powder or 2 chicken soup cubes
  • 2 large onions – sliced and fry in oil (barista)
  • 1 chicken – cut into 8 pieces and marinate in ginger-garlic-green chilli paste
  • Salt and pepper to taste
  • 1 tsp. Sweet Paprika or chilli powder
  • A dash of Worcestershire sauce or tomato sauce

How to Make Baked Rice with Chicken

  • Chop tomatoes and capsicums and spread in a large ovenproof dish. Place rice on this.
  • Place the fried onions on the rice and cover with chicken pieces. Pour the hot water mixed with soup cubes, salt and chilli powder and a dash of sauce if preferred.
  • Preheat oven to 180 degrees C and bake the dish covered with foil or lid for approximately 1 hour.
