Ingredients

  • 2 cups - rice (cooked)
  • 1 cup - tomato puree
  • 1 cup - curd
  • 2 cups - finely chopped vegetables (boiled carrot, onion, capsicum, boiled corn, mushroom and pea)
  • 2 tsp - red chilli sauce
  • 3-4 - garlic cloves (chopped finely)
  • 1 tbsp - vegetable oil
  • oregano and chilli flakes for garnishing
  • salt to taste
  • black pepper to taste
  • 2-3 cubes - cheese (grated)

How to Make Baked Spanish Rice

  • Heat oil, add the garlic cloves and vegetables and saute until tender.
  • Add curd and simmer for 5 mins.
  • Add chilli sauce and tomato puree and let the ingredients simmer for another 5 mins.
  • Add the cooked rice and mix well.
  • The preparation should not be dry; add more puree if required.
  • Add salt and pepper to taste, then oregano.
  • Put on a baking tray, top with lots of grated cheese and chilli flakes and bake until the cheese melts. Serve hot.
