Ingredients

  • 1 cup fresh basil
  • 1 tsp. garlic
  • Broccoli - 1 medium-sized
  • 2 tbsp. parsley, chopped
  • 9 tbsp. olive oil
  • 2 tbsp. pine nuts
  • ½ cup mushrooms
  • ½ cup green beans
  • ½ cup red pepper
  • ½ fresh asparagus
  • ½ cup black olives
  • ¼ tsp. salt
  • 150 gms. dry pasta
  • ½ cup parmesan cheese

How to Make Broccoli and Pine Nut Pasta

  • Put the basil, garlic, pine nuts and half of the olive oil in a blender.Puree until smooth.
  • Put the rest of the olive oil in a skillet, heat, and add Broccoli and green beans. Saute for three minutes and then add mushrooms. Saute for five minutes.
  • Cook pasta in the usual way, and drain.
  • Stir in the pureed mixture into the vegetable and heat for 1 minute.
  • Pour the vegetable sauce over the pasta.
  • Sprinkle with parmesan cheese and decorate with a few black olives if wished.
