This super delicious cake is made with simple ingredients - butter, sugar, eggs, milk, rice flour, vanilla essence, baking powder, pineapple slices and powdered sugar. 

Once the cake is baked, poke holes in the cake and pour pineapple juice through them. For added beautification, you can place a pineapple slice in between each of the 4-sections and also on top!

  • 1 ½ cups butter or margarine
  • 2 ¼ cups sugar
  • 8 eggs
  • 1 tsp. vanilla essence
  • 1 cup milk
  • 4 cups rice flour
  • ¼ tsp. salt
  • 4 tsp. baking powder
  • 1 can pineapple slices, save the juice
  • ¼ cup powdered sugar

How to Make Cake of Pineapple

  • Cream butter or margarine with sugar. Beat in eggs and vanilla. Alternately, add milk and dry ingredients.
  • Stir only until thoroughly blended. Bake in ring pan which has been greased and floured for 35 to 40 minutes.
  • While still warm, poke holes in cake with a fork and pour the pineapple juice into the holes in the cake. Place cake on serving plate and slice into 4 sections.
  • Place a pineapple slice in between each of the four sections and one on top of each of the four sections. Sift with powdered sugar.
