Ingredients

  • 1.5 cups- carrot, grated
  • 1.5 litres - milk
  • 1/2 cup cashew nut
  • 1 cup- warm milk for soaking cashew nut
  • 3/4 cup - sugar
  • 6- cardamom powder
  • 2 tbsp- ghee

How to Make Carrot Cashew Payasam

  • Soak cashew nuts in 1 cup of warm milk for half an hour.
  • Boil 1.5 litres of milk in a heavy bottomed vessel and keep stirring till it is reduced to half the quantity.
  • Fry the grated carrot in ghee for a few minutes.
  • Grind the fried carrot and soaked cashew nuts to a coarse paste. Add to the milk and add sugar and simmer till everything blends well.
  • Finally, add the cardamom powder and serve chilled.
