  • carrot, coarsely grated - 1 cup
  • cooked long grain rice - 4 cup
  • soya oil - 3 tbsp
  • garlic, peeled and crushed 4 cloves
  • ginger, grated - 1 tbsp
  • green chilies, chopped 2
  • spring onion, chopped - 1.5 cup
  • light soya sauce - 2 tbsp
  • coriander leaves - 2 tbsp
  • salt to taste

How to Make Carrot Fried Rice

  • Heat oil in a kadai or wok. Add garlic.
  • Fry till it is dark brown.
  • Remove the fried garlic cloves and discard.
  • Add ginger, green chilies and carrots to the oil in the kadai.
  • Stir fry for 2 minutes. Add spring onion.
  • Stir fry for 1 minute.
  • Add rice and Soya sauce or salt. Mix well.
  • Keep covered on very low heat till the rice is heated well.
  • Serve hot garnished with coriander leaves.
