Ingredients

  • basmati rice - 1 cup
  • lemon - 2 medium sized
  • turmeric powder - 1 tsp
  • green chillies - 9
  • red chillies - 2
  • cooking oil - 2 tbsp
  • grated fresh carrot - 2 tbsp
  • grated fresh coconut - 1 tbsp
  • freshly cut coriander leaves - 1 tbsp
  • fresh curry leaves - 2 strings
  • fried ground nuts - 2 tbsp
  • salt to taste
  • For Seasoning:
  • mustard seeds - 1 tsp
  • Bengal gram dal - 2 tsp
  • urad dhal - 2 tsp
  • jeera seeds - 1/2 tsp
  • asafoetida powder - 1 pinch

How to Make Carrot Lemon Rice

  • Cook rice and allow it to cool in a broad bowl or basin.
  • Heat oil, fry the seasonings and add red chillies, green chillies, curry leaves and fry for a minute.
  • Add turmeric powder, asafoetida powder, grated carrot, grated coconut and salt .
  • Squeeze lemon juice and stir well.
  • Pour over the cooled rice and mix well.
  • Garnish with finely chopped coriander leaves and fried ground nuts.
  • Serve hot with green chutney.
