  • 4 - carrots
  • 1 medium sized - onion, chopped fine
  • 1 tbsp - coconut
  • To temper:
  • 1 tsp - oil
  • 1 tsp - mustard seeds
  • 1/2 tsp - urad dal
  • a few - curry leaves
  • 1 - green chilli, slit into half

How to Make Carrot Stir Fry

  • Wash carrots, peel and grate them. Keep aside.
  • Heat oil in a kadai, add mustard seeds and let it splutter. Add urad dal and curry leaves, and fry for a min.
  • Now add green chillies and saute for 2 mins.
  • Now add onion and saute well till it turns soft.
  • Add coconut and saute well till it turns light brown.
  • Finally add carrot and mix it well, add salt.
  • Saute till everything is mixed well and the raw smell of carrot is gone.
  • Serve with sambar rice or any variety rice.
