Ingredients

  • 1 egg
  • 125 gms. Dessicated coconut
  • 125 gmss. Caster sugar
  • 5 halves glace cherries

How to Make Coconut Pyramids

  • Line a baking tray with rice paper and pre-set oven to 170 degrees C.
  • Beat the egg lightly then stir in the coconut and sugar.
  • Divide the mixture into 9-10 heaps on the rice paper and press into pyramid shapes or mould with an egg cup.
  • Top each pyramid with a cherry half and bake for 15 mins until just tinged golden brown.
  • Allow to cool before tearing away the paper.
