Ingredients

  • 1 cup - red, yellow and green capsicum, chopped
  • 1 cup - diced carrot
  • 1 cup - boiled corn
  • 1/2 tsp - grated ginger
  • 1/2 tsp - pepper powder
  • 1 green chilli
  • 1 cup each - chopped tomato and onion
  • 1 tsp - lemon juice
  • 1/2 tsp - ghee/oil
  • 1/2 tsp - cumin
  • Salt to taste

How to Make Corn delight

  • Heat ghee/oil in a pan, add cumin and allow it to splutter.
  • Add chopped green chilli, ginger, onion and fry well.
  • Add capsicum, carrot, salt, pepper powder and fry.
  • Now add boiled corn and stir well.
  • Mix with cooked rice, add lemon juice and serve.
