Ingredients

  • 4 cups corn
  • 4 cups plain flour
  • 4 cups grated cheese
  • 2 cups curd
  • 1 tsp cooking soda
  • 20 green chillies and 2 inch piece ginger (grind to a paste)
  • juice of 4 lemons (small)
  • 6 tsp sugar
  • 3 tbsp coriander leaves (finely chopped)
  • 2 cups water
  • oil for deep frying
  • salt to taste

How to Make Corn Fry 'Ems

  • Cook the corn till tender.
  • Mix it with all the remaining ingredients, except the oil.
  • Add enough water to make a slightly thick batter.
  • Deep fry big chunks of the batter in hot oil on a medium flame.
  • When the chunks are cool break each into 2 or 3 pieces.
  • Deep fry these once again in hot oil on a medium flame just before serving.
