Ingredients

  • 4 - hard boiled eggs, shelled and halved
  • 2 - medium cooked potatoes, peeled and quartered
  • 1 - medium onion, chopped fine
  • 3 - medium onions, sliced
  • 1 inch - ginger
  • 4 - green chillies
  • 2 - red chillies
  • 4 tsp - tomato paste
  • 2 tsp - coriander powder
  • 3/4 tsp - cumin powder
  • 1/4 tsp - turmeric
  • 1 tsp - garam masala powder
  • Salt, to taste

How to Make Easy Egg Curry

  • Heat 1 tsp oil/ghee and add sliced onions, ginger, green and red chillies, and saute till onions are pale.
  • Cool and blend together to a smooth paste.
  • Heat 1 tsp oil, add chopped onion fry till pale, add all the powders fry for a minute.
  • Add the ground mixture, tomato paste and salt, mix and let it simmer for 2 minutes.
  • Add potatoes and 1/2 cup water and bring to a boil and simmer for 3 mins.
  • Add halved eggs, simmer for 1 min. Turn off the heat.
  • Garnish with chopped green coriander.
