  • 4 red bell peppers, cored, seeded and coarsely chopped
  • 1 red onion, coarsely chopped
  • 2 cucumbers, coarsely chopped
  • Handful of basil leaves
  • Handful of parsley leaves
  • 2 garlic cloves
  • 2 tbsp. balmasic vinegar
  • ¼ cup olive oil
  • 2 cups chilled tomato juice
  • Salt and black pepper to taste
  • To serve:
  • 1 avacado, peeled and chopped
  • 1 soft boiled egg, quartered

How to Make Easy Gazpacho

  • Place the vegetables, herbs and garlic in the food processor and process until finely chopped.
  • Add the remaining ingredients, season to taste, and process again briefly.
  • Cover and chill for 5 minutes.
  • Serve in bowls topped with the chopped avocados and quartered eggs.
