Tomato Curry is a common veg curry in Indian households, slightly spiced with the right desi flavour. Ripe, juicy tomatoes are used to impart an additional tanginess to the curry. 

Tomatoes are cooked well with green chillies, curry leaves, ginger, turmeric and chilli powder. See to it that the tomatoes are soft enough and then, add coconut milk to achieve the desired consistency. 

Garnish with cumin seeds and coriander leaves and serve hot with roti or rice.

  • 8 big ripe tomatoes, peeled and sliced
  • 1 cup thick and 3 cups thin coconut milk
  • 4 green chillies, crushed to a paste
  • A few curry leaves
  • handful of coriander leaves
  • ½ tsp. turmeric powder
  • 1 tsp. cumin seeds, roasted
  • 1 inch piece ginger, minced
  • Salt and chilli powder to taste

How to Make Easy Tomato Curry

  • Mix together tomatoes, green chillies, curry leaves, ginger, turmeric, chilli powder and salt and cook till the tomatoes are soft.
  • Add thin milk and continue cooking till the mixture is a little thick.
  • Pour in the thick milk and remove from fire. Sprinkle cumin seeds and coriander leaves on top.
