  • 6 - eggs
  • A pinch - turmeric powder
  • 12 bundles - fenugreek leaves
  • 3 - onions, finely chopped
  • Oil
  • 1 tbsp - grated coconut
  • Salt to taste

How to Make Egg and Fenugreek Scramble

  • Chop the fenugreek finely
  • Heat the oil and fry the onions lightly, stirring constantly.
  • Add the fenugreek and salt to taste. Stir well then add 1 cup of water and simmer. When the water has evaporated, add the coconut and turmeric powder.
  • Stir well, add 1/2 cup water and simmer for 5 mins.
  • Beat the eggs lightly and add to the fenugreek.
  • Cook until the eggs set, stirring constantly
  • Serve immediately
