  • 2 cups - all-purpose flour
  • 1/2 cup - sugar
  • 1/4 cup - butter
  • 1/4 cup - oil, sunflower or canola
  • 1 cup - buttermilk
  • 2 tbsp - lemon juice
  • 1 tsp - lemon zest
  • 1 tsp - baking powder
  • 1 tsp - baking soda
  • 1 tsp - vanilla extract
  • 2 tsp - poppy seeds

How to Make Eggless Lemon Poppy seeds Muffin

  • Preheat the oven to 350F.
  • Sieve the flour with baking soda and baking powder, add the poppy seeds and keep it aside.
  • Beat the sugar, butter and oil until the sugar gets well dissolved, immediately add buttermilk, lemon juice, lemon zest and vanilla extract, whisk well.
  • Gradually add the dry ingredients to the wet ingredients; mix it well with a spatula. The batter will be quite thick.
  • Pour into muffin tray and bake for 20-25 minutes.
