Ingredients

  • 4 - large eggplants cut in small cubes
  • 4 - large onions cut in 2 inch strips
  • 6 - tomatoes cut in small slices
  • 2 - lemons (extract juice)
  • 1 cup - fresh coriander leaves
  • 4 - green chillies
  • 1 tbsp - salt

How to Make Eggplant (Salad)

  • Deep fry eggplant until dark brown.
  • When they start to brown, stir gently.
  • When done, set aside fried eggplants.
  • Pat the fried eggplant with a paper towel to absorb excess oil.
  • Add onions, tomatoes, chillies, coriander, lime juice and salt to the eggplant.
  • Mix gently.
  • Garnish with a little fresh coriander and chillies.
  • Serve hot.
