Ingredients

  • 100 g - ash gourd
  • 100 g - yellow pumpkin
  • 100 g - sweet potato
  • 1 - raw banana
  • 100 g - broad beans
  • 100 g - green peas
  • 100 g - double beans
  • 1/2 cup - toor dal
  • Turmeric powder, a pinch
  • 1/2 cup - coconut, grated
  • 2 tbsp - coriander seeds
  • 1 tbsp - channa dal
  • 6 - dry red chillies
  • 4 tbsp - oil
  • Salt to taste
  • 1 tsp - mustard seeds
  • 1 tsp - urad dal
  • Curry leaves, a few

How to Make Ezhu than kootu

  • Shell peas and double beans. Wash, peel and dice vegetables into large chunks. In a large vessel, cook all vegetables with salt and two cups water.
  • In a small pan, heat two tbsp oil. Add dhania, red chillies and channa dal and lightly roast.
  • Add coconut and fry for a minute.
  • Grind to a paste and keep aside.
  • Cook toor dal with turmeric powder in a pressure cooker and keep aside.
  • When vegetables are cooked, add the ground masala and cook for a few minutes.
  • Next, add the boiled and mashed toor dal and let it cook till bubbles appear.
  • Heat two tbsp oil, season with mustard seeds, urad dal and curry leaves and pour on the kootu.
  • Serve hot with rice.
