  • 1 tbsp. rapeseed oil
  • ¼ cup firmly packed light brown sugar
  • Juice of 1 lime
  • Pinch of nutmeg
  • 2 tbsp. chopped mint
  • 3 knobs of preserved ginger, diced
  • 1 mango, peeled and cut into chunks
  • 2 kiwis, peeled and cut into chunks
  • 10-12 strawberries, hulled
  • 2 tbsp. sesame seeds
  • 2 tbsp. preserved ginger syrup
  • 1 cup greek yoghurt

How to Make Gingered Sesame Fruit Kebabs

  • Soak 8 wooden skewers in water for 10 minutes.
  • Meanwhile, mix together the oil, sugar, lime juice, nutmeg, mint, and ginger in a bowl and stir until the sugar has dissolved.
  • Thread the fruit onto the skewers and brush with the syrup.
  • Sprinkle with the sesame seeds.
  • Place on a baking sheet and cook under a pre-heated medium hot broiler for 6-8 minutes, turning once, until turning golden.
  • Mix together the ginger syrup and yoghurt in a bowl and serve with the kebabs.
