Ingredients

  • Capsicum - 3
  • Rice - 1 cup
  • Onion - 1
  • Mustard seeds - for seasoning
  • Asafoetida - a pinch
  • Red chillies - 6
  • Cumin - 1/2 tsp -
  • Coriander powder - 1/2 tsp
  • Turmeric powder - 1/2 tsp
  • Curry leaves - few
  • Coriander leaves - a few
  • Salt to taste

How to Make Green Capsicum Rice

  • Cut capsicum into medium sized pieces.
  • Slice onion. Heat oil in a pressure pan.
  • Add mustard seeds, red chillies, curry leaves and asafoetida for seasoning.
  • When mustard seeds splutter, add cumin and coriander powder.
  • Add onion and fry till light golden brown.
  • Add capsicum, turmeric powder, salt and fry for 1-2 mins.
  • Add rice and enough water
  • When done, garnish with coriander leaves.
  • Serve
