Ingredients

  • 125 g - vermicelli pasta
  • 1/2 tbsp - olive oil
  • 1 small onion, chopped
  • 1 clove garlic, chopped
  • 200 g - chopped tomatoes
  • 2 boneless chicken breasts fillets, cooked and cubed
  • 1 small bunch - fresh basil, chopped
  • 1/2 tsp - salt
  • 1/2 dried crushed red chillies (optional)
  • 2 tbsp - freshly grated parmesan

How to Make Healthy Basil Chicken with Vermicelli

  • Cook pasta according to instructions.
  • Drain, and set aside.
  • Heat oil in a large frying pan, over medium-high heat.
  • Saute onions and garlic.
  • Stir in the tomatoes, chicken, basil, salt and chillies.
  • Reduce heat and cook covered.
  • Simmer for about 5 minutes, stirring frequently.
  • Toss sauce with pasta to coat and heat through.
  • Serve with Parmesan cheese.
