  • Urad Dal - 1 Cup
  • Sugar - 3 Cups
  • Kesari powder
  • Rose Water
  • Ghee/ Oil - 3 Cups

How to Make Homemade Jangri

  • Soak the urad daal in water for 10 minutes.
  • Do not soak it any longer.
  • Prepare syrup using 1 cup of water to 3 cups of sugar until a one string consistency of the syrup is attained.
  • Add a bit of rose water and kesari powder and dissolve.
  • Drain the water from the daal and grind without adding water.
  • The dough must be tight in consistency.
  • Add a bit of kesari powder to the dough and mix well until the dough is pale yellow in colour.
  • Place oil/ghee in a shallow pan and heat well on high flame.
  • Once it is hot simmer the flame.
  • Place a ball of the dough in the centre of the rett (refer notes) and fold the four corners to make a bundle of it.
  • Hold this a little above the ghee and squeeze out the dough in a circular fashion.
  • Make small overlapping coils in the circumference of the circle by moving anti-clockwise.
  • Then end by making a circle in the centre above the first circle.
  • Once the jangri is crisp and golden in colour, remove from oil and drop into the syrup.
  • Repeat.
