Ingredients

  • 1/2 cup - paneer cubes
  • 1/4 cup - spring onions separate green and white parts
  • 1 cup - cauliflower
  • Handful - green peas
  • 1/2 cup - capsicum
  • 1 - large potato, boiled
  • 1 - large carrot, chopped small
  • 1 - small tomato
  • Herbs and spices
  • 3/4 tsp - dried fenugreek leaves
  • A pinch - amchur powder (dry mango powder)
  • White pepper powder - 1/2 tsp
  • A pinch - kitchen king masala or meat masala
  • salt to taste
  • Ginger - optional
  • For Tempering:
  • Oil as needed
  • Pinch - mustard
  • Pinch - cumin
  • Curry leaves - a few
  • A pinch - of asafetida

How to Make Indian Mixed vegetable stir fry

  • Heat oil in a pan, fry paneer and set aside
  • Add curry leaves, mustard, cumin, saute add ginger.
  • Add spring onions (white part), cauliflower and green peas
  • Add turmeric, salt and mix, cover and cook till cauliflower is half cooked
  • Add carrots, potato, capsicum, tomato, salt and fry till all the vegetables are evenly cooked
  • Sprinkle fenugreek leaves, amchur powder, masala powder, pepper powder and toss
  • Add green part of the spring onions, toss and remove from heat
  • Serve.
